Cut the pork into bite-sized pieces and chop all the vegetables.
Dissolve the powdered sauce in a splash of water. Tear the noodle bags open a little and microwave for about 1 minute to loosen the noodles.
Heat oil in a pan and stir-fry the pork, then the vegetables, seasoning with a pinch of salt and pepper. Cook until just done, then move to a plate.
Add a little more oil and spread the noodles in the pan. Fry undisturbed until they take on some color.
Pour the dissolved sauce over the noodles and toss to coat.
Return the pork and vegetables, toss to combine, and serve topped with bonito flakes and red pickled ginger.
