Pizza Toast (Japanese Kissaten Style)

Japanese pizza toast — a thick slice of white bread spread with ketchup and topped with thin onion, green pepper, sliced wiener sausage, and melting cheese, then crisped in the toaster oven. A retro coffee-shop classic that Japanese families make at home in about 10 minutes.

Ingredients
  

  • 1 slice thick white bread (shokupan) the 4- or 5-slice-per-loaf kind is ideal
  • 1-2 tbsp ketchup our stand-in for pizza sauce
  • 1/8 onion sliced paper-thin
  • 1/4 green pepper (piman) sliced thin
  • 1 wiener sausage cut into thin rounds
  • 1 handful shredded melting cheese pizza cheese or any cheese that melts
  • 1 pinch herb salt or Italian seasoning optional, for that pizzeria aroma

Method
 

  1. Slice the onion and green pepper as thinly as possible (a mandoline slicer is quick and even). Cut the wiener sausage into thin rounds.
  2. Spread a good layer of ketchup right to the edges of the bread.
  3. Scatter the onion and green pepper over the ketchup, then arrange the sausage rounds on top.
  4. Cover with a generous handful of shredded cheese and add a pinch of herb salt or Italian seasoning if you like.
  5. Toast in the toaster oven until the cheese is melted and bubbling and the edges are golden, about 5-7 minutes. Once the bottom of the bread has browned, slide a piece of aluminum foil underneath so the base stops toasting while the top keeps melting.
  6. Serve hot, while the cheese is still molten.
