Green Pepper and Chikuwa Namul with Shio Kombu

A quick 5-minute Japanese side dish — thin strips of green pepper and chikuwa fish cake softened in the microwave and tossed with shio kombu, soy sauce, sesame oil, and sesame seeds. No stove needed.

Ingredients
  

  • 2 green peppers cut into thin strips
  • 2 chikuwa fish cake, cut into thin strips
  • 5 g shio kombu salted kelp
  • 1 tsp soy sauce a sweeter Kyushu-style one works well
  • 2 tsp sesame oil toasted
  • toasted sesame seeds to taste, for finishing

Method
 

  1. Halve the green peppers, remove the stem and seeds, and slice into thin strips. Cut the chikuwa into thin strips of a similar size.
  2. Put the green peppers and chikuwa in a heatproof bowl, cover loosely with plastic wrap, and microwave at 600W for about 1 minute 30 seconds until the peppers are softened.
  3. Drain off any water that has collected in the bowl.
  4. Add the shio kombu, soy sauce, and sesame oil and toss until evenly combined.
  5. Sprinkle with toasted sesame seeds. Serve warm, or chill for a bit to let the flavors meld.
